Tortilla Pizza

I was supposed to make Korean beef stew for tonight's dinner but I totally forgot the part of the recipe which requires me to marinade the beef overnight so I'll save the recipe for next Sunday. Today, I made something for merienda instead.
Merienda is taken from the Spanish, and is a light meal or snack especially in the afternoon, similar to the concept of afternoon tea. If the meal is taken close to dinner, it is called merienda cena, and may be served instead of dinner.
I've been thinking of making tortilla pizzas for a while now because of the leftover tortillas we had from the time I made fish tacos. Today, I finally made them!

Sunday Family Dinners: Stuffed Chicken & Mexican Red Rice

I was supposed to make the Mexican red rice along with the fish tacos, but I ran out of time so I decided to make it for our next Sunday dinner. I looked for a dish that would go well with the red rice and found a recipe for chicken breasts stuffed with apples and cheese on food.com. Cheese and apples are awesome together!

Also, I was able to take photos! I had my camera with me in the kitchen and man was it difficult to remember to take photos. I was able to take most of the photos at the start and at the end. Not much photos in the middle of the process, unfortunately.

NBI Clearance Woes

So, I had to get an NBI clearance for work, which I really hated because of the new system where everyone is back to zero and has to apply for a new one instead of just renewing their old ones. But, of course, I had no choice.

I woke up early and was at Ever Gotesco Commonwealth by 7 am last July 18, Wednesday. The line for the NBI clearance is on the "unexposed" side of the mall, opposite of where cars usually enter the mall and park. If you're not sure then just ask a guard there. The line was already long when I got there, no surprise, and when I got to the end of the line there was a sort of attendance sheet where you write down your name. I was the 208th person in line.
