I was supposed to make Korean beef stew for tonight's dinner but I totally forgot the part of the recipe which requires me to marinade the beef overnight so I'll save the recipe for next Sunday. Today, I made something for merienda instead.
Merienda is taken from the Spanish, and is a light meal or snack especially in the afternoon, similar to the concept of afternoon tea. If the meal is taken close to dinner, it is called merienda cena, and may be served instead of dinner.
I've been thinking of making tortilla pizzas for a while now because of the leftover tortillas we had from the time I made fish tacos. Today, I finally made them!

Tortilla Pizzas
Flour tortillas (I used whole wheat ones) | |
Tomato sauce (I just a ready-made one from a sachet) | |
Cheese (I used a mix of sharp aged cheddar and havarti) | |
Toppings: | |
Tuna (canned should be ok) | |
Green peppers, sliced | |
Onion, sliced |

- Grate your cheese and place in a small bowl.
- In a small pan, heat some olive oil. Once hot enough, add the onions and cook for a minute or so.
- Add the green peppers, mix, and cook for a minute or so.
- Finally, add the tuna, mix and cook for 2 minutes or so. You can season with black pepper or other spices, if you want.
- Heat another pan, big enough to fit your tortillas.
- Once hot place one tortilla on the pan over medium heat. Slightly toast one side and then flip.
- Turn down the heat and start adding your toppings. I put on the tomato sauce first, then sprinkled the cheese, then the tuna & green peppers.
- Cover the pan and cook for around a minute, until the cheese melts or until the bottom of the pizza is as toasted as you want it.
- Serve and enjoy!
You can use whatever topping you want for your pizza, I just used stuff that was already in the house. I think the fundamental bases are the tomato sauce and cheese. My mom requested for some Italian sausage for next time, which I'll probably mix with some mushrooms, green peppers, and more cheese.
